New Year's Pot Roast with Roots


  • 1 boneless beef chuck pot roast (about 3 lb)
  • 8 or 10 new potatoes, halved
  • 2 large carrots, chunked
  • 2 large parsnips, chunked
  • 1 leek, chunked
  • 2 cloves of garlic, minced
  • lemon pepper and salt to taste

Drop 'em in the Crock Pot and cook it all day.
